One of the authentic cultural elements of a place is the gastronomy. The peculiarities of taste from the kitchen of a region is often associated with the qualitative characteristics of society , while " revealing " elements of the cultural and economic history.

 

The region of Macedonia has suffered scores of refugees with totally different habits , customs and culture. Macedonia has been the site of a harmonious combination of Byzantine cuisine with oriental resourcefulness , fragrance and imagination to the local gastronomic tradition of the Macedonians.

 

The high quality natural products, such as virgin olive oil, wild greens , vegetables , spices , herbs , pulses , meat , dairy products, sweets , wine and raki are the basis of traditional Macedonian kitchen .
